A New Chapter at Deer Restaurant: Modern Czech Cuisine Reimagined

In a quiet courtyard just moments from Old Town Square, Deer Restaurant presents a new à la carte menu that builds on its distinctive approach to modern Czech cuisine.

Set within a historic house once known as U Dvou jelenů [At Two Deer], the concept of Deer has always been closely tied to its surroundings. The new menu continues this direction - with game at its core, complemented by a broader selection of dishes for those seeking lighter or non-game options.

A Menu Rooted in Craft and Balance

Rather than following seasonal changes, the menu is designed around ingredients that remain consistently available in peak quality. The focus lies in careful preparation and combinations that feel natural rather than constructed.

Game remains central - paired with elements such as root vegetables, mushrooms, herbs or subtle fruit notes. At the same time, the kitchen offers a range of alternatives, from pasta made in-house to dishes built around vegetables or fish, allowing the menu to remain open and versatile.

Selected Highlights

Among the new additions, several dishes define the character of the menu:

  • Wild boar shoulder with sour cherries
    Served with butter gnocchi, wild broccoli and salsify, the dish balances richness with gentle acidity.
  • Mouflon medallions
    Paired with Dauphinoise potatoes, sautéed shimeji mushrooms and a refined demi-glace.
  • Fallow deer salad with smoked roe deer
    A lighter composition of leaves, sweet-and-sour pumpkin and black salsify, finished with roasted and smoked elements.
  • Pumpkin risotto with duck breast
    A softer, more comforting dish, bringing together depth and subtle sweetness.

Desserts from the In-House Patisserie

An integral part of the Deer experience comes from its own patisserie, located directly beside the kitchen.

Signature desserts such as Les, built around honey mousse, forest fruit and chocolate, reflect the restaurant’s connection to natural flavours. In contrast, Harmonie introduces a lighter composition of mango, passion fruit and sour cherry, finished with white chocolate and edible flowers.

A Curated Way to Experience the Menu

For those who prefer a more structured experience, the restaurant offers a four-course degustation menu. It brings together selected dishes across the menu, accompanied by optional wine pairing.

The new à la carte menu is available from 24 April. Reservations are recommended, particularly for evening service.

Despite its central location, Deer Restaurant offers a notably calm setting. The historic interior, combined with a more intimate atmosphere, creates a natural pause from the pace of the city outside.
